Bolivian Organic - CIAPEC
You have gotten into fine coffees, and you love the varied complex flavors you can find here at the Corral. But sometimes you long for that simple balanced cup of coffee that those just-waking-up-commercials promised. Something unpretentious, but wonderful. If only those commercials had been telling the truth! I found that cup of coffee.
The CIAPEC is a balanced, slightly chocolate, simple cup of coffee. This is comparable to the big chain's all day coffee, but without their bitterness. Roasted to just before the first crack, this coffee has the slightest sweetness and the lightest earthiness that together bring a rich subtlety to its balance. This is what a lot of coffees sold in cans and in vaccumed bricks are aiming for. You could drink this cup all day and never get tired of it. It isn't over-powering and there is virtually no butter or brightness to the cup. But it is a very fine cup, and surprising for its whispers of banana and floral notes.
This cup is a little more dynamic in a press pot, and I blended it 50/50 with a dark Sumatran Mandheling for a fantastic espresso. But this coffee will win over friends still sold on the empty promises of those commercials.
