Our certified organic Mexican coffee from Chiapas comes from small growers in mainly the mountainous Soconusco region. The growers partner with a certified mill in Tapachula, who not only mills the coffee but cups and evaluates the end result, taking great pride in eliminating any defects that can affect the final cup.

Roasters who purchase organic coffee want to know their coffee preserves and protects the environment, but they also desire a high quality cup that will stand out above all else. Our Soconusco, Chiapas organic Mexican coffee is washed and sun dried.

Cupping Notes: Notes of dark chocolate, a slight citrus sweetness, some nuttiness and a well-rounded body.

I am a relatively new roaster, I've tried about 20 or so different beans, and this one was easily the best so far! Got compliments from everyone who tried it, a wonderfully mellow and buttery taste, I am buying more as soon as I post this...

I mixed these with the robusta beans that are also from the Chiapas Mountains of southern Mexico at a ratio of 1:1, and then roasted them for six minutes at 180 followed by six minutes at 215, and then finished up with five minutes at 240 to produce a nice medium-dark roast. With my little countertop JMS-270, that means that about 60% of them came out true medium-dark, 20% came out medium, and 20% came out dark. Now here's the important part: let these beans degas for three or four days before brewing. The result is a coffee blend that is smooth and rich (arabica) but also bold (robusta), and with one helluva strong caffeine kick. I've been selling 1-lb bags of the stuff like crazy at a competitive price under the name "Aztec Thunder - Pharmaceutical Grade."

We came upon Chiapas beans many years ago in Berkeley CA when Blue Bottle was a scrappy little company selling small bags of it to a couple of local restaurants. Sunday meant 8 o’clock yoga on 4th Street followed by a Mexican breakfast at Tacubaya across the street, accompanied by one off lattes with Chiapas beans. Time moved on and we moved across the country but had Blue Bottle ship us their roasted beans. Then they dropped it. We tried other versions and enjoyed them, then made the decision to roast our own. These beans don’t need to be roasted as dark some others and provide round and complex notes of chocolate and fruit with a pleasant richness or body. Best with steamed or foamed milk, in our opinion. Still one of our favorites and now we’re roasting the beans ourselves for maximum freshness.

This was my 3rd order of Organic Chiapas (5#, 10# and 25#) so you can guess I'm very pleased with the offering. I'm roasting this pretty dark and getting the chocolate flavors I hope for. We are very pleased with these beans! And re: my Oct review... I still see the need to rest the roasted beans about a week to get the best flavor in the cup.

I have ordered Chiapas coffee the last 3 times, previously under the user name [email protected]. The beans I received this time were decidedly different that the Chiapas I had ordered previously. The beans were 20% smaller and took a full 2 minutes more to roast and the taste is different. What's up? As stated, the beans I last received were different from previous Chiapas orders.

Just experienced my very first cup of fresh home roasted Organic Mexican Chiapas coffee. The delicate full flavor and sensation is like nothing I have ever experienced. Who knew that a cast iron skillet, a very low heat and constant movement like popping popcorn could produce such a living brew full of all it’s suble nuances, antioxidants and beneficial health properties. I will never go back to store bought coffee again and going forward will purchase my coffee from the fine folks at Coffee Bean Coral. Looking forward to my next purchase. Thank you!

Just finished our sample roasts and cupping of this coffee. We kind of slacked a little on the number of samples we cupped because we had an idea of where we wanted to end up. Left me just start by saying, this coffee caught us off guard. I don't want to sound disparaging toward organic coffees, but they aren't always all that exciting. This one is different though. I took it to first crack a little faster than I usually do with organics, only about 6:30 with a drop temp set at 380. 1c is distinct and not gradual. You hear that first pop and then 1c got rolling within about 10 seconds, which makes recording 1c less subjective, and great for replicating the roast. We took the coffee about 1:45 past a good rolling 1c, with a ROR around 10 degrees per minute after 1c started. That got the coffee into City+ range, and a total roast time of only about 8:15 (for volume roasters, this ought to put a smile on your face). At city level, 1:15 after 1c, you get a great orange zest notes with super lively acidity. Just 30 seconds and 5 degrees later, the orangey-ness is just starting to fade and the floral and stone fruit notes peak. 10 degrees hotter, and they flatten out, chocolate becomes a bit more predominant, but the complexity quickly fades away. At city+ you get apricot-like stonefruit, mild floral notes, a well-balanced acidity, nice round-body, and beautiful nutty follow-through. This particular crop is at the top of my list this year. What a perfect morning joe!

Excellent little bean. Very forgiving for the new roaster. Experimenting with the different roasts is so much fun. Trying to "coax out" the different flavors from this bean is a challenge, but i am getting better at it. Every cup, so far, has been smooth, mellow, and buttery. I could drink this all day long. Love it.

As goes with Mexican coffee it is not the worlds most carefully processed coffee, but with some amount of self sorting and poor quality bean removal this coffee can be a very bright flavorful cup.

I'm a rookie roaster so take my review as such. After several roasts, I found these beans are just ok. Medium Roast right at first crack was not pleasant, 2-2 1/2 minutes more is needed to get to a nice Med/dark. Inexpensive beans that judging from the other reviews you can get good results from with a fancy roaster, but I enjoyed Costa Rica El Conquistador Tarrazu much more.

Mexican Chiapas is my go-to bean for great taste, right after roasting, or especially after sitting for a day or more so that the oil appears on the beans. I prefer a darker roast. CBC has also been great- I have been a customer since 2008. Customer service is SOLID. Thank you CBC.

I slow roast with a showtime electric roaster,55 minutes. Smooth and rich not acidy at all. If I light roast it is a little butter scotch in flavor.

Owning a coffee company is quite an adventure, and although this is a nice bean it's not one we would invest in. Definitely a friendly n drinkable cup, no outstanding highlights though. Mexican yesssss, good absolutely but not great either. Thanks we'll keep trying, I've given samples too many customers... I'll be enjoying this at the shop 🤓

This is a great bean. I generally like dark Medium roasts and light Dark roasts. This bean has a great range! I personally liked the Organic FTO just a little bit more than the regular. The organic seems smoother to me.

Wow! What a great bean. Roasted it dark on open flame. Awesome flavor and really well balanced. I got lots of lemon in my batch not just notes of lemon it was almost as though it was flavored with lemon. Amazingly well balanced. Will be buying again.

This is our go too breakfast cup that never disappoints.My wife loves Mexican home roast. This offering roasts very easily in the Gene to city + . Mellow, soft on the palate, hints of milk chocolate, roasted nuts and fresh baked bread.

I think this is something like my eighth order Organic Chiapas and every bag has been excellent. This batch seems to have more chaff but in all other regards it roasts like the previous deliveries. Excellent in the cup with nice chocolate flavor when taken to the start of 2nd crack. I'm hooked on this coffee!

I veinna roasted this and espresso ground it then rubbed it into steak. The flavor was amazing. This created a nutty smokey, lightly chocolate addition to the steak.

This organic Chiapas has turned out to be my best purchase this year. Very pleased with the flavor. Moisture content seems to be a little high at nearly 17% weight loss. I'm guessing that's what I'm seeing as some unexpected variations in roast profile. I've been taking the roast to several seconds into 2C and am happy with the end result, but it takes a little patience: the roasted beans have taken at least 7 days of rest. During that time oil starts to appear on the bean surface continuing to increase each day- that seems to coincide with the arrival of the flavors I enjoy. Very, very happy with the results as are the folks I've shared this with.

This is a review of a blend with this bean. This bean alone is good. But a 50/50 blend with the Organic Sierra Nevada FTO might be the best cup I've ever had. If you like heavy chocolate notes this blend is for you. I don't have roasting temperatures to report as I roast by sight. For both beans I started cooling ~1 minute after first crack sets in. Beans had a sheen on them, not oil spots. Medium roast. I've roasted a lot of beans. This combo blew me away.

I usually like a little caramel and vanilla syrup in my coffee, but this one really loses the coffee flavor when you do that. We roasted to a dark-medium, and it's good, but I'd recommend not adding anything with flavor to it.

Roasted to just before/at second crack in a rotating cage drum over a Bayou gas burner with a heat diffuser and cooling fan. Easy to roast and tastes great. Used pour over to brew after 48 hour rest. Smooth cup with no off-flavors that can stand on it's own or blend.

This was a very nice bean to roast in my stovetop roaster. Very nice. It roasted to a nice medium roast in about 20 minutes on a medium heat. Not a lot of chaff which is nice. The flavor got more rounded out and developed after a couple days. This is my go to now

I can't tell the difference between "nutty", and "citrus". But I do like this bean. I find it smooth. Roast a few seconds into the second crack, and then let it sit for a few days, before brewing.

I didn't get a aroma cloud from the grinder like the Organic Honduras, yirgacheffe etc. And the mouth roll was ehh. I was surprised. I had it in the past and liked it but its been a while. Oaxaca was a little better.

This was my first green bean roast. So take my review with that information. I roast on the stove with two spoons and a cast iron pan. The roast lasts 15-18 minutes, on medium heat because I'm in no hurry. I end up with a medium to dark roast that tastes and smells great. I chose this variety of bean because it was inexpensive and didn't want to experiment with expensive beans. Looks like I picked a good bean regardless. I love it !!

I bought this for two reasons. One as a comparison to some of the African beans I’ve been buying. The second, and you’re gonma freak, as a cheap coffee to be flavored for my wife. By itself, tastes like an inexpensive coffee that I know most of my friends are accustomed to. Not subtle, not smooth, little u dertones. As a coffee to flavor, it works well

I have been persuaded to leave the dark side lol. this beautiful bean may be the one responsible for getting me to like anything not dark and shiny. My first few batches I did in my hot air popper and it just ruined them, either it never got hot enough to finish a roast (with the temperature sensor connected ) or it went too fast to an Italian roast. 😳🥺 So I decided to take some to work (pizza place) and tried the oven there. It has a conveyer belt set at 6min. And 450° which got me to first crack. after pushing them back in a bit they hit second crack and a few were showing signs of oil on the surface so I pulled em ... now that they set for a day I am drinking a beautiful cup of buttery goodness. 👍👍🤜💥🤛 If you haven't tried these beans and have the equipment to control your roast do yourself a favor and get some.

This is my favorite bean! I was so excited to find such a good price for an organic bean too. This bean is still delightful if you accidentally over or under roast a bit. It's smooth and creamy, with a bit of chocolate aftertaste. Shipping was incredibly fast.

This coffee is one of my favorites. It’s bold and chocolate taste is always the perfect cup in the morning. It’s never bitter. It’s incredibly easy to roast because the beans are small and tight. I get very little chaff off of the beans after roasting. This is a must have coffee in my house.

Smoothe buttery, chocolatey, nutty flavor. Lots of precious oil in this bean. Organically grown has the richest flavor. Roast til very dark and shiny (or a bitter taste dominates) and only roast as much as you’ll use in a few days. The oils taste freshest right after roasting. Great price too.

I brew single cup, drip for each cup I drink. I grind it, measure it, allow it to steep about a minute then filter and drink. This coffee has a very mellow flavor with out a lot of tannin or bitter taste. I enjoy it and many of my friends who only drink fancy coffee-drinks, or who don’t think they like coffee at all like it.

Roasted this to a dark roast and it produced a good cup of coffee but was a bit "dirty" tasting. I agree this is a good bean for a new roaster because it seems to produce a pretty cup regardless of the roast and also seems to roast a bit quicker for the impatient!

Makes a great cup; beans are earthy and smooth with a hint of chocolate. I roast in my oven; the beans are very uniform in size and are clearly high quality. They are super easy to work with. Beans are fresh and well packaged. Delivery was expedient.

I've been using this since I bought my HopTop roaster (couple of month now). Haven't tasted other beans better than this one. Until 2 weeks ago I used to wait for about 2 min and 30 seconds after first crack, but 2 weeks ago I roasted 2 minutes and 45 seconds after first crack and it was great! I wish I tried it long time ago :-) Note that it didn't taste good after a day, I needed to wait about 4 days. The beans had an oily coating. Great "all day" coffee. As others have noted, it is smooth and well-balanced. This is not necessarily my favorite coffee, as I prefer fruitier flavors, however, that is what makes it so good for all day sipping. And, as stated by others, I have received more compliments on this coffee than on any of my others. I find it does better when roasted a bit longer than I normally would. It is at its best right around the start of second crack. It is a good one to roast dark as well if you're into that sort of thing. I try to have a batch that's pretty dark for when my father comes over. In summary, it roasts well, it's a crowd pleaser, and it's hard to go wrong with this bean.
