Grown in one of Indonesia’s highest elevations, the Sulawesi Toraja is procured by micromills less than 3 acres in size. The community of farmers meticulously sort, de-pulp, and ferment the coffee cherries overnight––this is known as wet-hulling––a unique process that leaves the parchment and mucilage on the bean during fermentation so the coffee will possess an earthy flavor. The next day, the cherries are washed and stripped. Finally, they are patio-dried evenly in the sun for 2-3 days.

Cupping Notes: Low acidity, thick body, and moderate sweetness with flavors of cedar, dark chocolate, and vanilla.

This is our current house favorite. One of the best coffees ever! We look forward to our morning coffee when it is the Sulawesi and I bought 25 pounds to be certain we don't run out. I stop the roast right at second crack.

I ordered some Jamaican just to see if it was worth the price, it's not. The Sulawesi is far better. A wonderful cup. The kind of flavor that makes say WOW! Take it off the heat just shy of second crack, or, for an entirely different taste, a few seconds into. But for gosh sakes, don't burn it !

Tried this at Full City Plus, rested 1 day and it tasted really burnt. Tried again at Full City and let it rest for 3 days. It was perfect, perfect, perfect! Cathy

This one's for you Cat. I've been wanting to try this for a while, and after several hiccups, was finally able to. Roasted to City +. As with the other Sulawesi coffee, Kolossi, the most prevalent flavors were spicy and nutty. Didn't taste the chocolate noted in the description. Toraja's flavors were similar to the Kolossi, just slightly more muted. Spicy, not AS spicy. CBC's description says Toraja is less "earthy" than Kolossi, and I think that's accurate. The biggest difference to me was in the area of mouthfeel. Toraja was creamier and fuller, again noted by CBC, which made it more pleasant for me. While this won't be a staple for me, it's different enough and good enough to have occasionally as a break from my daily drinker list. If you're looking for a spicy, nutty, but more chocolatey coffee, try the Bali, another Indonesian. Of the three, I prefer it the most. Thanks to CBC for such a wide variety of coffees to choose from. On a side note, gaining knowledge of the geography and history of such faraway places as Sulawesi has been very fun and rewarding.

Absolutely love this coffee. I have had Sulawesi in the past, but I didn’t control roast. I took it about 30 seconds pass1st crack and now I’m a Sulawesi fan. Nice body and smooth finish. Really pleased.

Full bodied, chocolatey, sweet, mild a touch of earthiness that isn't overbearing. I stop it about 15 sec into second crack and brew it at 178°F. This is only the second day after roast, so it should only improve in complexity.

This is my re-order of Sulawesi Toraja from The Coffee Bean Corral. The beans are consistent and exceptional. Very low acid, beautiful caramel, and rich mouthfeel roasted at City+. An exceptional bean. The checkout process was seamless and shipping was reasonable and very fast.

I’ve used Sulawesi in several blends with outstanding results, the latest blended with equal parts of Costa Rican Tarrazu and the Sulawesi Toraja. Roasted to about 30 seconds past the first crack, the spicy quality of the Sulawesi and the chocolate/fruity notes of the Costa Rican coffee blend superbly. The coffee gassed out in two days. I use an OXO pour over to get optimal results.

Got this one as part of a sampler pack and did a medium roast as that's our normal roast preference. We understand why it's called a "sleeper" on the site; made in a moka pot and as pour over, we're hooked at first cup. It's got a chocolatey, nutty smoothness that makes for pleasant drinking.

This is the best home roast that has very little chaff that roasts consistently good. It’s a bit pricy but worth it. I buy it in 10 lbs increments and drink 3-4 cups a day.

Excellent on its own with a nutty, honey-like mildness, I’ve used the Sulawesi as a blending bean with a Guatemalan and Nicaraguan beans that produce fine coffees with unique depth and smoothness.

Review Summary: I want to begin with a short but succinct explanation of my reaction to this special coffee bean that yields a light body combined with the low acidity resulting in a creamy texture and full-bodied flavor profile. Just after the first crack, it adds a dimension to its complexity that separates it from the pack from coffee in this region of the south-eastern highlands of Sulawesi. Conclusion: It is rare to see a true “wet grinding” process as evidenced by traces of mucilage that add to the fermentation process that remained on some of the beans prior to shipping. This process is less cost effective to the grower because of the extra time and process washing however the result is something special. I also enjoy its low acidity which translates into having more coffee during the day without the occasional gut rot because I drink a lot of coffee. Thanks CBC for bringing this to market.

At this house we like light roasts, yielding 86% or so of the starting weight. These beans delivered, with a very even bean-to-bean color suggesting they were all fully ripe when picked. The really low chaff also speaks to quality processing. Top notch for taste of course but don’t look to me for cupping accolades because of all my additions: sweetener and milk.

Sulawesi is & has been my Go To coffee & CBC has done a great job in obtaining a fantastic crop! I air roast mine medium at 425F for about 16min to a nice chocolate brown which brings out the sweet, medium body I have come love about this varietal. I purchased 10# & then another 25# before the 1st shipment arrived. It will make a great gift to my coffee loving family this holiday season.

What a delightful coffee. Glad I latched onto it. Great balance of brightness, complexity, body and finish. I prefer medium roasting, to just at the very end of the first crack. No oil showing on the beans. Two or three day rest and you're good to go. Fascinating how very different Sulawesi is from its cousin--Sumatra. Easily a top three coffee in my book, along with some of the top Kenyans. Toraja works for me more so than the other varietals. There was a HUGE improvement between one day rest and three days. One day result was 'meh'. Three was 'wow'. Patience, Grasshopper.

Roasted at City+ it was very woody/earthy, and I noticed that sweetness and spiceness. I hate to overroast a nice coffee, but I couldn't get enough of this coffee when I roasted it darker (FC+ and up). Even without rest this coffee is nice, though rest really did nice things.

I keep going back to this one. Definitely has become my favorite as well. No matter how I roast it, it is good, full-bodied and flavorful. If you haven't tried it, you need to--just once & you'll be hooked!

Right on!! I had those same thoughts when I first tried it ~10 years ago...and it's still one of our favorites.

Very nice cup! roasted to about 30sec past end of FC (about 420 BT for me on a fluid bed roaster) Brighter and bolder than other similar varieties I have tried. Love the body on this coffee, definitly adding it to the short list.

Sulawesi beans did take some extra time to reach the perfect temperature. With my new roaster I have been able to go with a setting of 230 Degrees and 38 minutes, but these I had to sit and watch after I did my test batch. At 38 minutes they still had not hit the second crack and had to go an additional 6 minutes to reach it and then found that they were good but not perfect. The final conclusion was 48 minutes at 230 and I got the rich excellent flavor I was looking for. It was chocolaty with a slight sweet and fruity overtone. Very velvety and aromatic. No bitter after taste.

Tried this on a whim for the wife and was blown away by how good it was. Used the SR500 with a temp probe and roasted on low to 315 then medium to 400 and then on high to 458. Cooled down and poured onto a pizza pan and into the freezer for a few seconds. Bagged it, tagged it, very light oils showed up after a few days. I drink cup after cup after cup and can't get enough. FC happened from 401~420 and SC started around 455. I let it get into SC for a few seconds. Can't wait to roast batch number 2 and order some more.

(reviewing as a city roast) Can a bean be both light and bright, and earthy at the same time? I would have thought that an impossible contradiction until I tried these beans. Low acid, but what little acid is there lends to a tobacco undertone. There's the hints of buttery cocoa, but more like baking chocolate. A hint of caramel sweetness on the back end too, but still earthy forward. But with all these "dark" flavor profiles, it's overall impression is indeed something like cedar. A very unique bean in both flavor and process; it seems to take a little longer to mature. Mine reached peak almost 3 weeks after roasting. [250g Roasted on a Gene Cafe, preheated, slowed to 444 temp for browning, 482 until first crack, one min at 472 for expansion, about 11 min total. Fairly light, only 10% moisture loss.]

First time roasting this bean. I’ve been roasting a couple years on my SR500 & SR800 with Razzo 12” chimney (extension tube). I had 3 pounds of Sulawesi Toraja to try so I wanted to try something different and blend a Mocha Java of my own. I have quite a stash of Yemen and wanted to use it up so I created a 50/50 blend and roasted it dark for 11.5 minutes going through a staged profile. What a beautiful cup! Very smooth and flavor just pops. I definitely want to share this coffee with friends or as gifts. CBC keep this bean coming, it’s a great standalone and perfect in blends too.

Good stuff! I am a fry pan roaster and have worked thru many errors learning how to roast for peak flavor. The trick seems to be to stop roasting after the first crack. About 7 minutes with the pan at temp of 473* using a laser thermometer. A little high in temp is better than a little low for a constant crack. Do not let the temp get too high or you will burn the beans. When the crack slows, take the pan off the heat and cool quickly to stop the roast. Colander over a fan. I also use a propane fish cooker for heat.

My favorite coffee I can afford. Mellow and yet very rich in flavor. No bitterness. Love it. I have a friend who lives in Jakarta. He was coming for a visit and I asked him to bring some Sulawesi. I had been drinking Kalossi which is also a Sulawesi, but never had Toraja before. I was overjoyed with the Toraja. Wow! My favorite coffee I can't afford is Yemen khulani natural. Double Wow!

This is a very good bean at City roast. Probably my favorite bean so far. I like it slightly more than the Kalossi, as it has a more chocolate/caramel profile.

I absolutely love this coffee. Light roast just after the crack. It’s truly a delicious coffee & my go-to for an every day & special occasions. I’ve tried other peaberry coffees, but this by far exceeds them all in flavor.

Not quite as complex as I'd hoped, I guess everything can't be Yirgacheffe... lol. Plus, I'm new to roasting, so it may also be on me a bit. Still, way better than anything that I've ever bought preroasted. I did find it to be pleasantly balanced with great nutty notes. It was good both at city for pour over and darker for espresso. I will order it again.

Wow. Just a perfect cup of coffee. I roasted just before second crack and I got buttery toffee and light nutty tobacco notes. Full body, yet velvety smooth. low acidity. I could drink this every day. I highly recommend this bean if you like a smooth creamy cup of coffee.

Just when I thought I found a new favorite coffee from Coffee Bean Corral, BAM I find another one! Great, bold taste. Smooth with the slightest bite, for me. Roasted fast and hot to just before second crack. I only let it rest for 12hrs before my first taste and it was fantastic. I'm eager to see how the taste evolves as it ages.

My current favorite coffee. I used to prefer Tanzanian Peaberry, but this peaberry is superior. Light, chocolate notes, brightness and boldness. I've ordered other types to compare and nothing does. It's best done at a light roast, IMO, but it will take extra long for a burr grinder to grind because these beans are hard. Its completely worth the wait.

This is my wifes favorite bean and one of my top two Indonesians. It roasts fantastic, in my case a nice pre second crack medium roast, with few outliers/odd beans post roast. Don't be afraid to stop it before second crack! We like it best after about 3 days rest. Outstanding.

This coffee has so much complexity but is very approachable. Went with a FC roast and it brought out so many flavors. Will buy this one in the future along with the Misty Valley. This one has a new place in my regular orders

Nice body, not too bright, good coffee. Roast takes a little longer than some to get to second crack, but I stop at hint of second crack. Let rest for a day of so.

I first tried Sulawesi at a Greenberry's Coffee shop in Palm Beach County. It was great, but nothing can beat roasting this stuff yourself. A FULL RICH bean that shines blindingly in the pan as it gets darker and darker...Just roasting it is a pleasure! I never met a cup of Sulawesi I didn't like. Its smooth and robust at the same time and definitely will give you a 'lift'. Maddie

Got a sample of this on my Halloween surprise same pack. Roasted it yesterday up until right before 2nd crack. I have never had a bean that I could ever taste tobacco in, but it shines through in this one. It’s not overpowering but you can tell it’s there, a slight vanilla tobacco. It’s not something that I would have initially bought on my own, but since it came in the sample pack I gave it a shot, and it may be one of my new favorites.

Sulawesi beans are harder to roast than normal Arabica beans; it also took much longer to reach 2nd crack. The taste is dull as a single or as blend but the caffein is high. I think this particular bean is Robusta rather than Arabica.
