"Mattari" is a term of territory distinction in Yemen. It refers to high quality coffees that grow in a subtropical climate and sandy loam soil in the Mattari-Sayhee mountain valley of Sana'a in western Yemen. 98 farmers from this region bring us this traditionally processed lot: natural, hand-picked, sorted for consistency, and dried in a single layer in full sun on raised beds or rooftops.

Yemen coffee requires expert knowledge spanning multiple generations, and the Muslot family has been the most dedicated since the 1970s. Now reborn in the 2000s as Pearl of Tehama for Import and Export, it is still owned by Fatoum Muslot. Hardships are constant in Yemen, but the disruption of international trade has not stopped the Muslot family and Pearl of Tehama from exporting this coffee with the highest quality.

OK, this one sure caught me by surprise... I take back all the things I thought about you when I first inspected the beans. This was my first experience with a Yemen and when I saw the very small and irregular looking beans I thought you sent me the "leftovers" from the bottom of the bag. I remembered "it's all about the cup" and decided to go ahead and roast some... WOW, this is a really good coffee! Maybe you should include a little about it's appearance in the description to prepare newbies for what to expect. Thanks for all the good service and coffees!

Yemeni beans have become harder and harder to find, particularly well handled beans, due mostly to the on-going war in Yemen. As a result, I've taken to keeping a Google alert for Yemen coffee beans, and every so often, some make it into the U.S. market, notwithstanding the U.S. condoned war there. I'm rarely disappointed for the wait. I'm a big lover of many types of African coffee beans, particularly Ethiopian. And I find Yemeni beans to be comparable and sometimes better than even some of the best Ethiopian beans. The five pounds I ordered here have lived up to my expectations. Although they were small and of different quality (which leads to a challenge in obtaining a consistent roast), the flavor of the beans (at a second crack dark or City roast) includes dark chocolate and fruit tones, with a smooth (not acidic) finish. If you've never tried Yemeni beans, but you like African coffees (or more particularly, Ethiopian coffees), take the plunge! You won't be disappointed!

If these beans are in stock I buy them every time I place an order. They are different from any other bean I have tried. My preference is a light roast. I hope the farmers in Yemen are well rewarded for their efforts, they certainly deserve to be.

Matari is my favorite bean. However, the size of the coffee beans is not constant. Also, there are more defects than other beans. You must do a hand pick. This is a bean that requires a lot of effort. However, it is very fragrant and has a good flavor. It is not always possible to buy from this site, so it is recommended to try it when it is in stock.

The first cup was espresso. The result was a stunning dislike. First taste impression was something like the flavor of dirt. Next morning, an Americano, and a pre-made one in a vacuum bottle saved for a later lunch. First morning Americano generated same flavor of dirt, but then something magical happened; the Americano in the afternoon (6 hours later, and still hot in the vacuum bottle) was exquisite! Apparently this coffee needs to breathe after brewing. In doing so this bean is like nothing else I've experienced. I'm not even sure how to accurately rate this coffee, but after letting it breathe it's easily 5+ stars for it's uniqueness.

Exquisite! OMG this coffee is amazing. Sucha different flavor than any of the other MANY coffees I've tried from here. IO ground the first pot three days after roasting and it was very good but as time went on, it got better and better and better. So the second time i roasted a batch, i waited a full seven days before grinding the first pot. Give this coffee a try. Its very different. You'll love it.

A wonderful coffee! I have loved Yemeni Coffees for the 20 years I have been home roasting. This one is one of the best. A heavy body, rich with a complex menu of flavors: mainly chocolaty with tropical fruit notes, smooth, and becoming even richer in flavor as it cools. I roast it in a Freshroast 800 with an extension tube. I start it hot, but turn down the heat at the beginning of first crack, and let it coast at the lowest heat until it is a dark burnt sienna in color, with the softest sheen like the leather of new shoes. Let it rest for a few days, grind fine, and brew in a vacuum pot or pour over, and you have the most delicious cup of coffee you have ever tasted. As one of my friends remarked, "This is what coffee should taste like!"

First I tried roasting it to my usual medium-dark, and the result was a scorched, bitter, over-roasted cup. Then I roasted it to medium (17 minutes at 200 degrees Celsius), and discovered that that is where this coffee shines. The result was a rich complexity, smooth yet bold. Not easy for me to describe. I ended up mixing it 50-50 with medium roast Brazilian Fazenda da Lagoa which gave it a mild chocolatey flavor. Every drop was delightful. I sold it under the label 'Fazenda Mocca.'

Maybe the best coffee made available by CBC, Yemen beans are to hard to come by, these are my all time favorite. I find them a bit temperamental to dial in but the result always pleases. I edge the roast up to Vienna, I just prefer darker roasts but somewhere slotted between full city + and a dark roast is the sweet spot for my tastes. Well balanced, rich as Yemen should be, earthy with a dark cocoa and birch beer note. The aroma is unmistakable. If you read up on the origins of Yemeni coffee you can almost taste it in the cup and fully appreciate the luxury of this bean. This is more than just a cup of morning joe, this is truly an exploration of a distinct taste of an old world coffee that delivers on its history.

I got a pound of Ishmali along with some Java to make some classic Mocha Java purely for nostaligic reasons, but after trying the Ishmali I forgot all about the Java, LOL. I sent most of what I roasted to my kids so they could experience first hand why chocolate flavored coffee is called "Mocha." But when I tried to order more, OF COURSE the Ishmali was no longer available :-( so I tried the Matari. My memory is not the best but it seems to be not quite as chocolaty as the Ismali, but still, from espresso to Cafe au Lait, no matter how you brew this the chocolaty goodness is evident. I just wish I could afford to drink it all the time.

One of my favorite cups of all time!! Roasted to FC+ in a fresh roast sr800. It’s smooth and chocolatey, rich and complex. Also tried it in a 50/50 mocca-java blend. First Yemen for me. Absolutely fantastic!

These beans are very different in size and appearance but don't be fooled. They give a remarkable cup with wonderful flavors. A lighter roast yields a more earthy, spicy flavor while darker roasts give pronounced chocolate and red berry flavors. This is one of my favorites!

I reviewed this once before. I could never understand the negative reviews, because this is the very best Yemeni I have roasted in a long time. I think the people who don't love it do not know where to stop it. IMHO, the very best flavor and aroma with all the Yemenis is just approaching a Vienna roast. The bean color still has those lovely dark red tones, and the oil is just beginning to show - a satin finish instead of suede or high polish; rather like a pair of new Italian leather shoes. Right at that point you get the real richness of the flavor, the heavy body mixed with chocolate and fruit, without any sting of bitterness. Right there it is magical! I finally convinced my son, who always said he disliked coffee, to try a cup. He tried is and his face lit up and he said "Mom, this is delicious!" . He is now roasting his own coffee, and it is Moka Mattari!

I home roast only naturals, usually Ethiopian MISTY VALLEY Yirgacheffe. I was pleasantly surprised at how delicious these beans are. They are just as tasty if not tastier. I was a little worried when roasting, because the beans looked close to the second crack, yet a lot of chaff still seem to be on the beans. However during the cooling all but a few beans cleared.

I guess you might associate Yemen with earthy, well I don't pick up much earthy, but more fruit/flower. Too much for my taste.

This Yemen has a very unique flavor and does well with pourovers. I like to roast light and the flavor does not disappoint. I wait 72 hours after roasting to drink. It has great body with a hint of brightness. Excellent. Highly recommended.

Very unique coffee.. a new taste sensation, different from typical African coffees. Very smooth and hard for me to describe the flavor. Very good! The beans were excellent, very small beans with great consistency!

A big fan of Yemen coffee. Definitely one to keep on hand and roast for that special cup for weekends and other special occasions. Price point does not make this an everyday drinker. I roast just a touch into 2nd crack. Yes, bean are irregular, hard to hear 2nd crack, lots of chaff, but makes an exception cup of coffee.

Excellent cup. Took the roast a tick past full city + and may have stepped over the line of extracting the more the character, body and richness of these beans and not more toast. None the less I prefer a darker roast so it satisfies my pallet. what an inspiring cup of coffee, rich and intense with a dusty cocoa on Tiramisu character at the finish. Its addictive. Didn't really see an issue with the beans they cracked aggressively and roasted well. I agree a longer set-up does wonders. Hope to be able to enjoy more beans from this region. Winner!

Initial reaction to the green beans: 1. small and irregular with some larger beans thrown in. Typical of Arabica (fragile) beans 2. it had a distinct aroma almost like alcohol as if fermenting almost like they were old beans. Roasting: 1. Many beans did not roast and were discarded 2. A lot of chaff and some stuck to the beans and not removed Grinding: 1. Aroma much different than was expected (a good unexpected') Brewing: 1. Aroma much different than was expected (a good unexpected') Taste: 1. WOW I cannot believe this is the same coffee described above - Delicious! 2. Packaging is not always indicative of the prize inside! 3. This is one of the finest coffees I have ever had! 4. Treat yourself and try this coffee you will not be disappointed! 5. I definitely would order this again!

High Quality I strongly recommend it; the beans were roasted to medium for espresso (chocolate milk color like maybe slightly darker), made a cafe latte with a ratio 1 oz espresso shot to 5 oz of foamed milk, the result was a very smooth nut taste Latte without the bitterness and sourness.

In a Behmor 1600, I used the 1 pound/ P3/ B settings, and loaded 8 oz of green beans. Gives a potential 20 min roast. 1st crack comes with 4:30 to 5:00 left. It is very subtle (my theory: small bean = small sound) 2nd crack started with 2:30 to 2:15 left, and I immediately hit the cool button as soon as i heard the “rice crispies” just starting. Some small beans may get stuck in the mesh of the barrel. A tiny few may fall in the tray. Chaff is moderate. Makes a remarkable cup, taste is different but very refined. Amazing that it comes from such a war torn part of the world. So, I sipped - and prayed for the growers. A few salty tears in the coffee never hurt anything.

mixed 1 part mocha with 2 parts Indonesian java and we are very pleased with the deep rich flavor that resulted. After allowing it to breathe for 3 days, we have now this this our Sunday coffee go-to. I personally recommend roasting it from a full city-roast to almost a French roast. This tends to give it a lot more flavor.

The Yemeni Mocca - matari is an excellent coffee. I buy different varieties of unroasted beans, both Arabica and Robusta for my morning cup. I roasted the moccaa - matari to a full city roast. The flavor is amazingly great, lingers on your tongue for a while. It has a good chocolaty , winey flavor. I strongly recommend this coffee to any coffee lover. As a matter of fact coffee bean corral has the lowest price per pound. I will buy this coffee again.

Wow, this is good coffee. Well worth the price. Surely a favorite in my coffee selection. I must say, it is difficult to hear 2nd crack, so need to go by visual. Once I find the roasting sweet-spot, I think this will be awesome coffee. Enjoy!

Balanced acidity brings out a wide range of flavors which could be summarized as a wild complex chocolate bomb when taken approx. 30 sec into 2nd crack. A fun exotic aromatic rich coffee. I really like it!

Russ, assuming this is from the same lot from which i purchased a short while ago, it's a winner. In addition to the "usual"..or unusual qualities in a Yemen, there was also a nice bottom end. I use it as a 15% component in my espresso blend as well. A reminder to those roasting this...let it rest at least 2 days...or 3...and it constantly changes as it ages! I like mine about 6 days after roast. I take mine just a couple of cracks into 2nd. Discard any ultra light beans, but keep the dark tan ones.
I don't think it's possible to say too much for personal preferences and your review exemplifies it - thank you.
TIP: learn what takes place at each phase of the roasting process (read "Roast Styles / Names" in the coffee school section) then roast your coffee the way you like it, to bring out the qualities you want - good job!!

The definite classic small bean varietal which produced the expected intoxicating aroma arrived very promptly and adequately packed in plastic one lb. bags. As this is my first experience home roasting beans I have to experiment further with roasting variations in order to achieve the cup that I'm familiar with from pre-roasted Matari. As I believe I overroasted a small batch of Ismaili, producing what I imagine expresso roasted Ismaili would taste like, (a little burnt with an aftertaste of classic Ismaili med. roast in the upper palate), I may have overcompensated by not roasting the Matari enough, as I'm tasting primarily light bitterness without the expected caramel or other flavor components, even though the roasted beans smell fantastic. That nose dissipates very quickly from the brewed cup, however. Consequently, I will have to experiment with further roasts before I can comment on the finished product. The raw beans, however, appear clean and in good condition. I'm really hoping for the best because finding pre-roasted Ismaili at anything near this price is impossible.
