This Decaf Colombian Alma Del Cafe Excelso comes from multiple smallholder farms in the Antioquia/Jardin region of Colombia. Excelso means the beans are smaller in size than their Supremo counterpart and less intense. Delicately fruity in taste with flavors of chocolate and caramel. Straightforward and clean, and works well with different roasting styles and roast levels.

Cupping Notes: Clean and sweet, with a softened acidity and medium body. Flavors of cocoa and caramel with hints of tropical fruit.

Blind taste test against Decaf Colombia Excelso EP ethyl acetate process. Both purchased at identical times, roasted to medium dark roast, ground at 9 in a Baratza Encore grinder. Rested 2 days. The difference was striking. The SWP was one dimensional, with flavors of fir sawdust, better than most decafs, but simple. The ethyl acetate process for identical coffee was complex with mineral, and spice. It appears that the Swiss Water Process is destroying a lot of the flavor. It really opened my eyes to what is happening in the decaffeination process.
