The Pacamara varietal of the coffee plant is unique. If people aren’t talking about its outstanding flavor and cup attributes, they’re talking about its distinctive size. The Pacamara coffee resulted from the crossing of Pacas and the Maragogipe varietals in 1958.

The Pacas is a natural mutation of the Red Bourbon varietal, as determined by research conducted by scientists of the University of Florida. The Pacas trees are shorter in size, have tighter internodes, and develop a compact foliage which help it endure tough climate conditions like tough winds, sunlight, and water scarcity. It is highly resistant to diseases, adapts to many growing conditions, and provides high production yields.

Rafael Silva oversees all of the production at their coffee farm properties, and runs their milling operation, Beneficio San Pedro, in western El Salvador

First time purchase from CBC , haven’t roasted yet but like the cloth bag the beans come in. Delivery time is very reasonable. Don’t like shipping charges, no matter how much the total comes to, even if you buy $100 worth. So buy as mu ch as you can at one time.

Sad first of all that in writing this review, that CBC is presently out of stock of this exceptional coffee. Normally, I roast about two pounds of coffee per week for our personal consumption. Since we love variety, I usually have 2-3 coffees on hand for the week. I did not get to roast the 2nd coffee and only roasted the El Salvador Finca La Siberia Pacamara Washed SHG. So glad! THis enable us to drink this every day this past week and enjoy its subtle nuances experienced daily as it peaked. I usually smell the 'green' beans, after roasting, while grinding, brewing and finally drinking. I cannot stress this enough, but the aroma of this coffee is so wonderful, all I can add is, this is exactly why I love coffee in the first place, the aroma! The 'Olfactory' receptors (your nose), and taste buds are so closely aligned. If it smells good it will likely taste good. This coffee smell great and tastes great. Will order it again when available! YOu should try it too!

I really liked this one. It met up with my palate and they became friends. The flavor balance is excellent. It's actually one of my favorites. It has some complexity to me, and a delicious overall flavor. Roasted City+. I should also mention that the beans are really big and plump. I will buy this again with pleasure.

OMG, this is delicious! Medium roast. Sweet , syrupy, thick body and strawberry!
