The Pacamara varietal is unique. If people aren’t talking about its outstanding flavor and cup attributes, they’re talking about its distinctive size. The Pacamara coffee resulted from the crossing of Pacas and the Maragogipe varietals in 1958. The Pacas is a natural mutation of the Bourbon varietal, as determined by research conducted by scientists of the University of Florida. The Pacas trees are shorter in size, have tighter internodes, and develop a compact foliage which help it endure tough climate conditions like tough winds, sunlight, and water scarcity. It is highly resistant to diseases, adapts to many growing conditions, and provides high production yields.

Cupping Notes: Very nice clean, berry, cherry, lemon, brown sugar, honey, winy, melon, apple, and strawberry cream notes .

Rafael Silva oversees all of the production at their farm properties, and runs their milling operation Beneficio San Pedro in Apaneca, El Salvador. They use Penagos machines for de-pulping and demicillaging, and have extensive covered drying patios and specially designed drying greenhouses that they use. Lots are divided daily by farm, variety and process, and kept separate throughout the season.
