This new El Salvador Microlot comes from Rafael and Carmen Elena Silva. About 150 years ago, the Silva family planted coffee trees on one of the highest summits of the Apaneca- Ilamatepec Mountain Range and named the 28 hectares Siberia for its tumultuous weather conditions and difficult accessibility. Rafael Silva inherited the property and began his career in coffee 100 years later. Ecological awareness has allowed Rafael to come up with innovative ways to produce organic matter for fertilization. He uses a massive production of earthworms to process the coffee pulp which creates lombricompost that is then used to fertilize the trees. These coffees from the Silva family are very sweet, clean, and balanced with red fruit and honey flavors.

This is a delightful coffee that’s a great break from the chocolate and caramel flavored varieties. Very smooth, sweet and has great fruit. The acid is just right to make it a lively cup. I highly recommend it.

Took this to FC (just before second crack) and am very impressed with it. I love how the variety of flavor notes come through in different brew processes. For example, the berry and stone fruit (plum, I thought) came out in my Melita pour over. The Chemex screamed with the chocolate covered cherry. (I was surprised as how specific this came through!) The citrus and melon were not super pronounced, but still the emphasis of the Americano. All around, the sweetness was VERY evident, as was the acidic brightness. (Hence the high scores in those categories from CBC)
