Maria, the owner of the Pacas Estate, was one of the first in the world to cultivate Pacamara variety of Arabica, a hybrid of Pacas and Maragaturra. It takes the properties of both, highlighting exceptional flavor of the Maragaturra plant, with the efficiency and yield of the Pacas. Cafe Kreyol partnered with Rolando, Maria’s wash station manager in 2017 to develop an experimental fermentation using Wine Yeast to override bacteria and completely control the fermentation. This was applied as the coffee was fermented in its fruit, and even again as it was de-pulped. The result was an extraordinarily consistent honey process with a high level of sweetness. Smooth and creamy bodied. Extraordinarily sweet with floral undertones.

Smooth is definitely the most appropriate adjective for this coffee. The dynamics of this coffee were on full display as the cup cooled. I picked up a flavor/texture reminiscent of a coffee that seemingly splashed with condensed coconut milk. At times a smattering of slighter notes akin to Nutella along with a sidecar of cinnamon also made an appearance.
