This is an Organic Grade 1 natural coffee from the Kayon Mountain farm located in the Guji zone of Ethiopia's Shakiso district. The Kayon Mountain Farm, owned by Esmael Hassen, harvests about 300 hectares of its 500 hectare farm and uses its own wet and dry mills for processing. Elevation ranges from 1900 to 2200 meters above sea level (masl) and variety is entirely Ethiopian Heirloom.
After harvest, cherries are machine pulped and fermented for 24 to 36 hours. The beans are then dried on African beds for 12 to 20 days. Kayon Mountain Farm keeps one washing station and one dry huller in the Shakiso District and has a sister company in the Guji/Kercha District, with two washing stations and a dry huller. All stations and hullers are committed to exporting traceable coffee.

Xlnt coffee. Roasted to a Medium medium + and it is creamy smooth with a nice body and a clean fruity after taste. Very enjoyable as a standalone and good to blend with other favorites. Not like most Ethiopian coffee, better.

At a light roast, this is the fruitiest coffee I’ve came across! Darker roasts bring out a bit more of the chocolate notes and tone down the fruit, but still very fruit forward. A very exotic cup! For me it is definitely not a daily drinker. But I love it to break up my normal routine.

New favorite. Great price for a complex, rich taste. At a slightly darker roast, medium-dark, the chocolate notes come out even more. Overall, it has a sweetness, a buttery tone, and chocolate underneath. Have been using as espressos and americanos.

As described a wonderful Ethiopian Natural. Fruit notes are over the top, you've got to be a fan of Ethiopian coffee to appreciate this level of fruitiness as a stand alone. Works really well in a blend with something more robust. My first roast of this coffee was perfect using my standard Natural Ethiopian profile.

Great choice. Roasting light-medium and we got this idea from local roaster in Santa Cruz that calls the roast "Mora Mora". It's amazing Mt. Guji has this flavor. I've never had a better cup. I'm not a professional roaster, and have not tried more than a dozen beans from coffee corral.

This was a wonderful roast well balanced and definitely worth a try, while cupping I got aromas of blueberry and some chocolate smells on the taste strawberry and that blueberry and the finish had some chocolate! Also I roasted this to City Plus

This coffee is next level! Please keep it stocked. My first time roasting this coffee I roasted it to a medium and those fruity notes; strawberry, blueberry, etc were very pronounced and lingered during the roasting process and for a little while after roasting. The next time I tried roasting it a bit lighter and was surprised by a strong floral note that reminded me of white tea. The fruity notes were still there, but not as strong as before. This is exactly what I hope to get out of a Guji Sidamo

What a great coffee. I typically do not go for the Ethiopian beans as they are higher in the acidity, but this one is really well balanced, and still has a unique fruity quality. In contrast to most of the central & south American beans I've tried, these are smaller. I use a popcorn air-popper-- the chaff stays stuck to the bean longer than others, and it is quite fast from first to second crack, so you have to know when to pull the plug. A little bit trickier, but well worth it!

Long time coffee drinker, but newbie roaster. Still developing my palate to the nuances of different coffees. When I read "strawberry" in the description, I thought, "huh"!!! Well no kidding, strawberry! Along with a light chocolate, the taste is so unlike anything I've ever had. And the taste really lingers after each sip. Roasted to Full City. Won't be my everyday morning cup, but occasionally and after dinner with dessert, what a great option.

Never had this coffee before, I'm usually into Yirgacheffe more. I was really impressed by the fruity, chocolatey flavor of this one. Definitely had to get a good dark brown color with most of the chaffe off before cool down on SR540 roaster. I like my coffee strong (not bitter, just strong) and this seems to be on the weak side. Next pot I will add 50% more coffee to strentghen. I'm really glad I tried this one!

Makes awesome single origin espresso. Sweet and chocolaty with good body. I roast it lightly. I drop it between 2/3 and 3/4 thru first crack.

Easy roasting through the first crack. Keeping it light and fruity. Wonderful floral hit in of floral in the drying phase, so I knew it would be good. Roasted aroma is sweet fruity compared to most other coffee, which is what I was looking for. Mellita pour-over , nothing fancy for preparation! Goood taste from the start, straight no cream or sugar. None is needed it gets sweeter as it cools , so the finish is like dessert. I purposely wait a while before drinking to bring out the fruity notes, but then it is gone to fast. Great Bean!

I really enjoy this coffee, though my favorite is a good Kenyan peaberry this is my second favorite so far. I really enjoy and appreciate the reviews on this website; they are very helpful. I love reading everyone's reviews. I've been drinking coffee all my life (74 now), but never truly analyzed it until recently. I bought 3 sample packs before Christmas, then bought a Behmor brewer, and I'm hooked. This Ethiopian Kayon is an amazing coffee. I have only tried 2nd crack with it since I usually drink a darker roast (but now I will try 1st crack, based on reviews). This coffee is almost worth the price of admission by simply smelling the deep aroma when grinding it. My grind is between medium and fine. It currently is three days past roasting. I use an Emeril airfryer with a rotisserie basket purchased from Amazon for $12. 450 degrees. 3 minute cool down. It is a very even roast. I just ordered a 3# bag from CBC. Smiles

Hilarious that the other review was almost identical to what I wanted to write, this coffee had no reviews when I ordered it so I wanted to give it a go. It is very fruity, so fruity it smells"off" after roasting and letting it rest for 2 days. It tastes sweet and had a very nice blue berry, dark chocolate finish that lingers. Everyone that tried it said the same thing. I will be ordering more of this, also that 18 rabbit Honduras black honey process is very nice. Roasted to just 30 seconds passed first crack in a Fresh roast SR 800.

Full disclosure: I am a huge fan of naturally processed coffee. I like the sweetness, the fruit flavors, and the taste of chocolate. This was definitely that. It is a one of the finest cups of coffee I’ve tasted. I roasted in a whirley pop, full medium roast. This year, it is my #2 rated coffee, so far. If you’re wondering what my #1 is, it’s Honduran 18-Rabbit Natural. It has many of the same qualities as this fine coffee, but more amped on the fruit flavor. This might be a better “every day” coffee, however.
