The La Laja Honey Process and La Laja Washed are two sides of the same coin––the same bean, but processing brings out a different flavor in each. With the washed-processed bean, the fruit and sticky pulp are removed almost immediately in order to provide a clean taste with minimal sweetness.

Its origin, La Laja, began in 1920 when Hermilo Sampieri bought his first coffee farm. Since then, La Laja has become a family business growing coffee beans, mining, and exporting. There are currently seven sister farms––Finca La Laja, Finca El Mirador, Finca Las Palmas, Finca La Veracruz, and three others in Puebla, Mexico. La Laja owns a wide variety of cherries because they purchase them from smaller farmers in Chiapas. Experts in processing, La Laja is proud to hold both wet and dry mills.

I really love these beans! They are easy to roast & are always consistent. So much so that I’ve renamed these beans my “Semper Fi” beans because they are always faithful! I enjoy roasting these to a “city to city+“ level. I like the light citrus & chocolate notes that seem to come out. My friends that I have shared my roasts with seem to like it quite a bit as well.

This is the beginning roasters dream. Just getting started roasting in the last three or four months. With all the learning curve with multiple types of coffee, I have found this one works great at multiple levels and is simple to roast compared to most others I’ve tried. My wife LOVES this coffee.

One of my favorite beans overall. Can be roasted to dark/Vienna and is still super smooth and nutty. I always have some on hand and it is a top request of customers.

I ordered a sample of this. Roasted light-medium. It's only rested for about 24hrs before first cupping. What I like is that it's very easy bean to roast, not too delicate. Coffee has orange citrus notes with an oak like undertone and finishes with a mild light bodied earthiness. It is good.
