Peru Organic Cajamarca Chirinos Grade 1

Organically grown by multiple smallholder farms in the Cajamarca region of the northern highlands of Peru. Cupping scores for this coffee are in the mid 80's with a medium body, nice acidity, and flavors of stone fruit, almonds, and honey.

It’s not bad, I did a medium roast and could not taste the honey undertones, did a medium dark and the same happened. I’m not a light roast kind of guy so all and all it’s ok in brightness and complexity, ok balance. It was a good cup!

Roasted to a City+ in a Fresh Roast SR800. Good, clean and balanced coffee. A 3-5 day degassing period makes a significant improvement.
