This exceptional selection from Al-Haymah, just southwest of the country’s capital city of Sana’a, comes to us from a company called Pearl of Tehama run by Fatoum Muslot.

As is traditional in Yemeni coffees, these were dried on raised beds and rooftops in the whole cherry before milling. With such minimal processing, you get coffee close to its origin. Get this and other phenomenal Yemeni varieties when the opportunity arises.

Cupping Notes: Dried strawberry, figs, baking spice, and milk chocolate.

I am not a professional reviewer. I tried cupping about 10 years ago, and couldn’t finish it. I liked this coffee, but my wife didn’t. I always buy at least five pounds, roast 400gms to try different roast times, profile etc. We are on the first roast. We shall see.

I must have nailed the roast on the first try. Stats: Hottop roaster charged with 200 grams (thermocouples tend to measure 10 degreesF lower then some) Target was to reach FC slowly and gently then to develop for 22% Charge 405ET TP: 195 @1:06 Dry 50.8%/ Maillard 26.8% / Development 22.5% FC: 359.6/10:14 15.2% dry Drop (for a medium roast) 383.0 @13:12 Brewing: Inverted Aeropress 1:15 ratio medium grind Result/Summary: Awesome balanced Dried strawberry, figs, spice, milk chocolate just as described after only 24 hour rest. This is now absolutely one of my favorites and am looking for a bit longer resting period for the next taste. Todd Anderson I roasted this bean in to second crack. It came out with chocolate notes and has a very thick mouth feel. I like it. For an upscale bean, I did not feel it was as good as some of the regular priced beans offered by CBC. I am glad I tried it. I may, at some point, purchase more. I still have 1/2 pound left and I will try a different roast level to see how it will differ from the first.

I roasted it to medium-dark, let it degas overnight, and brewed up two cups using the pour-over method. The result was a rich smooth flavor with no bitter aftertaste whatsoever. The cupping notes are accurate, especially the notes of milk chocolate. I drank the first cup black, and the second cup with my usual adulterants (a wee bit of raw sugar, Half n Half, a few drops of Mexican vanilla, a teaspoon of coconut oil). Both ways it was insanely delicious. I have been purchasing coffees from CBC for a year and a half, I've been going through sample bags like crazy, and I can say without a doubt that this premium coffee is the best one that I have bought here. I intend to have this product on hand all the time. Yes, it's more expensive than most of the other beans, and my retail price is twice that of the other coffees that I offer, but as I explain to my customers, "it's certainly not for everyone." Now I have to fight the urge to drink up my personal stash. You will want to score at least a few pounds of this top-shelf coffee.

Haven't found the right roast for this coffee. Comes out with a muted flavor profile.

Fast roasting 360 GMs. nmt 12-15 minutes for light roast. Bright citrus flavors, great caffeine content, be diligent when roasting.

This coffee is amazing. Lemon acidity with sweet peach accents make this coffee akin to a Georgia Peach Pie. Placing an order for a second bag while it lasts.
