raw green bean Green coffee is raw Roast prior to consumption

Coffee from Yemen is grown on mountainsides 1,500-2,900 meters above sea level. This variety was grown in the regions surrounding Bani Ismail district. Ismaili is also the name of the variety from the region. It is characterized by smaller, more rounded beans than many other varieties and offers a more delicate flavor profile than most Yemeni-origin coffees.

These beans are naturally sun-dried on rooftops in the traditional style.

Cupping Notes: Sweet, heavy body, strawberry, chocolate, and nuttiness.

Big chocolaty flavor. Rich and smooth bean. I roasted till just after second crack. This bean has a lot of flavor.

Wonderful bean! The mouthfeel, the depth, the aroma and flavors are hard to match. A very forgiving that can easily go beyond a city roast. Best enjoyed as espresso.

Roasted to 10-15 seconds into second crack. Amazing cup of coffee, can 't say enough great things about this coffee.

Before any other consideration, the infrequent availability of Yemeni beans merits a taste. The first thing I noticed was the smallness if the beans. When roasted to what I think of as a "city lite", deep color and the lightest oil glisten, the resultant cup has a thick creaminess and a great aroma. The complexities of flavors led me to use a cold water extraction which I feel gives a better taste profile.
