"X" is the grade given to the largest PNG coffee beans. Fittingly, this coffee also has a large flavor! The industry of coffee is in Papua New Guinea is going backwards, which is a very good thing. Previously dominated by very large productions along a single road through the center of the country, the natives have pushed back, even closing some large producers, to produce smaller more controlled lots. They are more locally handled and come out with more complexity and less of the "funk" that has overwhelmed the subtleties of these coffees in the past.

This lot of A/X Kuta is a prime example. It shows that volcanic clay flavor of medium body with brightness and complexity, but the care in production has meant that the coffee is not dominated by the earthy, wild components and a more subtle pineapple with an even milky sweetness comes to the fore. It is dark and delicious but wild and mysterious. And it is grown just above a little town that is becoming known for its surfing.
