  • Country: Honduras Marcala Region
  • Altitude: 1400m asl
  • Varieties: Red Catuai and Yellow Catuai
  • Process: Honey Process

The beans are grown on a female owned micro-lot in the Marcala region and honey processed, giving this roast tasting notes of green apple cider and caramel. Slightly acidic, with a hint of natural sweetness, this brew is a must-try. Roasts well at medium to dark. Try a medium roast for a brighter/crisper cup with a hint of chocolate. At the 2nd crack it has honey like sweetness, with a silky body and still just a hint of chocolate.

Medium roast cupping notes:

Chocolate aromas that carry over into the cup, and pair well with a clean malic like acid that brings a fruit forward note of green apple. Extreme sweetness/balance.
