A nice blend, though not without some issues. I've roasted 4 batches in my Original Poppery, stopping each just before the first snaps of second crack. The first was 175gr and I picked out 53 quakers. I tried to slow the second roast way down, hoping it would even things out a bit, without success. That's an awful lot of defects for a premium coffee. It would seem that the prep on one or more of the beans used in the blend wasn't very good.
The Yemeni component of the blend thoroughly overpowers the Ethiopian component. I get the wild/spicy/earthy/bittersweet chocolate notes I associate with a nice Yemeni, but not nearly as much of the sweetness/fruitiness as I typically get from a good dry-processed Ethiopian.
All that said, after 1.5 to 3 days of rest, pour-over brewing yields a very nice, very typical Yemeni in the cup, and Aeropress shots are smooth, chocolaty, and delicious. I'll be revisiting this one in the future.

Roasted to a French roast. Trying it 2 days after roasting, had a very harsh flavor when prepared as a pour-over. 5 days after roasting, tried it with the Aeropress and it smoothed it out considerably. Noted the chocolate hints with the Aeropress

Roasting it dark/oily. I think these two beans are a good match, so this blend is a natural. Don't think you could be let down by this one. Strong body, earthy, smooth.

I love this coffee, roasted twice in my Hottop KN-8828B-2K+. Both times I maintained a smooth profile with around 33% in browning phase pre-first crack, and around 21% in development phase, ending about 30 seconds after FCe. No temp drop at end of roast, but was challenging to keep heat flowing smoothly into beans. Overall roasts were about 10% longer than for most Ethiopian beans I roast. I ended with a city/medium roast. Tasting notes: I get under-ripe cherries, blueberry, earth, vanilla, hints of chocolate, syrupy sweetness balanced against acidity.

This a great blend - enjoyed by the whole gang here.
Using a Whirley-Pop stainless, roasted two-thirds of a pound (or so) of the Red Sea Blend to the very beginning of second crack. I've now let it rest for five days. The bean aroma is outstanding and pleasant - with a warm herbal note, like coriander. A hint of that comes through on the taste, but my novice palate enjoys initial dark chocolate followed by something like maybe marshmallow type flavors. Looking forward to trying a lighter roast next time and see what flavors and aromas that provides.

This one I took the roast to City/Medium. I then let it rest for 72 hours. We did have a difference in the blends appearance as I believe the Yemen Bean is a fit more dense and smaller. But, we try drip which the coffee is good at. However, we decided to try it as a French pressed coffee and wow, what a delivery we received! It was sweet and full bodied! No need for sweetening this coffee. It just sang and danced across our palates. A beautiful coffee! I highly recommend this coffee served as a French press! Roasting level at city delivered both the bright berry notes and the warmth of both these coffees blended! I would not go much higher. I also say, be patient in its curing, and explore your favorite brew to mouth delivery process!

I can't tell you a berry profile from a flat tire; what I know is if I like it or not-
Took it to just under the second crack; let her rest for about 4 days, French Pressed it.
I like it.
Definetly getting it again.

I recently had the pleasure of roasting and tasting this exquisite Red Sea blend. Okay maybe I should go 5 stars but then because this is me roasting I don't always get the subtitle flavor profile flavor notes.
I am pushing this up to second crack but not into second crack. My inital brew which is drip after 3 days rest showed some lemon flavor and fruit undertones. Brewing it the whole house woke and commented how they loved the smell which isn't always the case.
Next time i'll take the second part and push into second crack and see how it does as espresso my other brew method.
