I am a Yemeni coffee addict. I hadn't tried this one before, and my first roast was good but not quite as good as the Yemen Mattari. I roasted it to about a full City, and posted a favorable review, second place to your Mattari. This time I took it to a Vienna stage. and it was WONDERFUL. I cannot understand how some reviewers posted such negative reports. I can only guess that they do not understand Yemeni coffee. Sorting the beans in a natural coffee like this is just silly, and yes. These little critters have a lot of chaff. They are not processed like washed Columbian. And they need to be fully developed: a light roast does not do them justice. I take it to a dark burnt Sienna color with a slight sheen - like new Italian Leather shoes - just a few seconds before second crack. At this precise point, you get a brew that is smooth, full bodied and full of chocolate and fruit, but without any "sting" at all. THIS is what COFFEE should be! DELICIOUS!

This Yemen is a bit "tamer" than the Mattari. Somewhat sweeter, and not as complicated. Perhaps I need to go a bit darker to bring out the deeper notes. It is a Desantis compared to a Trump, but altogether a good tasting satisfying coffee combining some chocolate with figs and bananas, with some pistachios thrown in. I like it, but I prefer the Mattari, at least until I experiment with a few darker roasts.

Been roasting for almost 40 years. Roasting this coffee takes some finesse, but if done right. It seems some reviewers obviously didn't and I can't blame them for their poor reviews as they obviously missed the mark. To each their own I guess. Again, when done right It has notes in it no others can replicate that delight the senses and it is one variety I especially look forward to roasting and drinking. The often reviewed flavor notes aside, there is an earthy-ness to it, which is the best way I can describe it. Reminds me of early Wallenford blue mountain thirty years back before they overprocessed it like as of lately. There was a reason it was legendary, as of late I am far from impressed though. Or the precious Hawiian volcanic background flavors on some of the smaller private older Kona plantations I have personally picked on. All while watching wild chickens chase lizards around and admiring the stunning views as the sun hit the ocean far below. Those beans picked up all the smells around them including the soil they grow in. Good Yemen is no exception. Few reviews seem to mention this? As a professional, I have roasted and sampled thousands of bags from every corner of the planet. One of my top three ever? A superbly roasted Yemen.

@ Todd. Thank you for sharing your roasting recipe for these beans! I made 10 batches using your recipe and it came out great. My previous attempts at making this coffee live up to my expectations fell short on numerous occasions. I hope my review can serve as yet another example of trying new things and looking for the right recipe. Todd's recipe works great for these beans and I found it also reduced the beans chafe some in my Gene Cafe Roaster. Thanks you again Todd for sharing this wonderful recipe!

Cupping flavors: Clearly defined Chocolate with very faint berry in the finish. Strong and well developed body with a full mouth-feel.
Statistics: Roast level City+, Moisture loss 13.66 percent, Development 23.1%
Green Been description: Lots of variability in size, with a surprising amount of peaberries mixed in. This has the greatest variation in size/type of any previously purchased from CBC. This is a higher altitude bean, so an agressive roast cycle was tolerated well by the beans.
Roasting challenges: The varability in bean size meant there was a potential for variation in final roast level.
Roaster Gene Cafe CBR101 2016 model.
Roast description: (uniquely for Gene Cafe CBR 101 models).
*Preheat the empty drum to 402 F (206 C) for 5 minutes.
*Rapidly stop and remove the drum. Quickly fill with the green beans. Re-insert the drum, start the roast at 402 F, start kitchen timer.
*At 5 minutes on the timer, raise the temperature to 473 F (245 C). *Continue at this temperature until the first pops of First crack PLUS 30 seconds.
*On this roast, first crack began at 10 minutes 00 seconds, temperature was lowered at 10 minutes and 30 seconds to 437 F (225 C).
*Continue to roast at 437 until roast is complete.
*The goal on this roast was City+, this was reached 13 minutes 00 seconds into the roast. About 25% of the beans had light cracks at the tips.
*The beans were dumped and force cooled. This was before Second crack began by a large margin.
Post Roast Notation: There was some varability in roast (due to difference in bean size), but not as significant as I had feared. It was not notable in the cupping.

If you like grading out defects this is the bean for you. I stopped pulling defects at 10g per 100g batch only because i didn't want to spend any more time sifting through them. Taste is nothing special. If you value your time and quality of bean I do not recommend these.

Ordered Mocca and Java to roast and blend. Let me say WOW these are good. I’ve wanted to try these for a while now and I’m sorry I waited so long. I’ll be getting more soon.

My experience in roasting these two Yemen coffees now is to dump the roast on the first one or two cracks of first crack. I have gone longer and find no redeeming qualities. But a short roast of this one yields lemon notes with a chocolate finish. I like it!

Roasted medium-light, roasted medium-dark. The latter was slightly better but pale dominantly vegetable flavor with touch of chocolate.

I don’t normally do this but I recently bought 5 lbs sight unseen based on the current reviews because these beans are purported to be some of the very best green beans. I roasted over a pound of beans on my SR500 before I hit a delicious roast.
These beans are very delicate! To get the best roast you have to be careful with the heat and know when to pull them. I roasted on high heat for 2-3 minutes to get the roast going, then switched to medium heat. When I heard the first two cracks of FC, I dumped the roast into my colander to cool. 24 hours later, it’s a beautiful cup! Delicious!

So this one is a little more expensive, relative to most others on this site. So if your on the fence relative to the price, I would suggest you get off the damn fence. Another level.

Love this Yemen. Never had it before. I find that it's very sweet with lots of citrus notes and great aftertaste that doesn't linger. I only roast light so I can't comment on other types of roasts. Highly Recommended.
