NATURAL Process...SCCA Score: 85.5 This coffee comes from a certified organic single estate in the Jarabacoa region of the Dominican Republic. The Ramirez Estate employs over 400 people. Forty percent of the workers are women and many of them are Haitian migrant workers. Workers are paid roughly 300 percent higher wages than Fair Trade standard, and the Estate uses a sizable portion of their profits to create sustainable gas recycling (to reduce emissions), water filtration (to prevent river contamination), and to donate computers and books to many of the local schools.

Process: Natural, Rotating Dryers

Cupping notes: Smooth and low in acid, with a creamy body. Aromas and tasting notes of almonds, walnuts, and chocolate.

Roasting notes: While this a good coffee for a medium roast, it is definitely one for the darker roast lovers looking for something a bit more exotic and complex. A darker roast will bring out the chocolaty and earthy undertones.

This is the third Dominican coffee I have ordered from Coffee Bean Corral and so far this is my favorite. I roast my coffee light, looks kind of like a brown paper bag in color. Even roasted that lightly, it still has a really nice chocolaty flavor. I might even say it's slightly sweet like the sweetness you would find in a good rum. The other coffee I roast is an Ethiopian, which is more complex than any Dominican I have roasted. I like the Dominican coffee because it's a nice alternative to Ethiopian coffee. The Dominican is Chocolatey, a little sweet, and a nice, clean, coffee flavor (even roasted light).

Please note, I am new to roasting so it could be my technique but this coffee exhibited fermented fruit smell and taste. Come to think of it, fruit cake would be the exact description I would use. I roasted it Full City (very dark, into the second crack, but the beans did not smoke or show oils). Bottom line, the fruitcake taste really showed through on espresso making the shots unpalatable and adding milk made it worse. However, in a French Press that fermented fruit flavor was almost pleasant still not particularly to my liking but I can see how someone else might like it.

With in my top 10 choices, roasted full city plus on the verge of second crack. Full body, not too floral, excellent everyday coffee great for blending.

Very good. Not as strong as I expected, but very good flavor. Definitely better as a dark roast.
