Ramirez Estate Bio: In the Dominican Republic, the family-owned Ramirez Estate run by the third generation employs over 400 workers who live and work on the property and make nearly 300% higher wages than Fair Trade Standard. Before the Ramirez family purchased the land in the early 1990s, the land was impotent and bare––natural water springs had long since dried up and farmers had only been raising cattle.

Today, the Ramirez Estate is one of the most environmentally-progressive and socially-conscious proprietorships in the world because they recycle materials used during coffee bean processing. First, coffee cherry parts that would normally be thrown out are converted into natural gas through fermentation––in turn, this natural gas powers their facility. Next, the used water is also recycled, filtered, and returned to water systems. Lastly, cherry pulps are added to a compost pile where they’re used as fertilizer useful to nearby farms.

In addition to creating exceptional coffee, the Ramirez Estate also gives back to its community in countless ways. By building schools in rural areas, local children no longer have to walk nearly twenty miles a day, and after donating books and computers, students have more opportunities to learn. The Ramirez Estate also allows other farmers in the Dominican Republic to use their processing plant to assist in coffee export.

The pictures seen on our website are part of our personal experience touring the estate and meeting the Ramirez family––they are humble, honest, and produce some of the highest-scoring coffees we carry.

Natural: This Ramirez Estate bean is naturally-processed coffee grown in the Jarabacoa region of the Dominican Republic (which is 1,400 meters above sea level). Its fruit is left on the bean without disturbance for weeks on end, allowing ample time for fermentation. Once separated at a mill, the beans are dried with rotating dryers. The notes are fruity, but not overwhelming.

Cupping notes: Smooth and low in acid, with a creamy body. Aromas and tasting notes of almonds, walnuts, and chocolate.

I think I've stumbled on a new favorite. I roasted to a Medium (SR800 for ~8 minutes, held below 470F thru 1st crack, before 2nd crack). It makes a tasty espresso at a fine grind. Next I'll try an Aeropress cup at a coarser grind.

This coffee is a BERRY BOMB and competes with any fruit-forward Ethiopian. Bought a pound on a whim, quickly got addicted, and just bought another 5lbs. A City roast brings out these wild flavors. I’m drinking a pour over. Haven’t experimented with espresso yet.

Small time connoisseur. At present I roast in an air popper. Roasting this Ramirez Red Honey to 15-20 seconds into the second cracking is perfect for me. I’m not an expert on all the “notes,” but this is one of the best I’ve ever roasted, with any device, over the last 20 years.

Nice coffee, but rather bland. I am a Yemen coffee addict, so perhaps it is unfair to judge this Ramirez by that standard. I roasted it up to, but not quite, second crack, taking it slow after the beginning of first crack. The beans finished with a dark burnt Sienna color, and just a hint of oil. This one is low acid, mild chocolate flavors, but compared to the Yemen (which costs 3 - 4 times as much) lacks that COFFEE essence - the very complex flavor that says, "This is what coffee should taste like". I think most coffee drinkers would find this coffee quite agreeable but someone used to Yemeni, would go home and prepare his special brew and settle down to enjoy real COFFEE!

Am really enjoying this coffee. I do cold brew and this bean really shines. I also have been experimenting with lighter roasts. I did this one to about a minute into the first crack. Coarse ground and then soaked in water for 24 to 36 hours it creates an elixir that I heat 1/2 cup in my mug and then fill with hot water. The taste is fantastic with no additives. I like black coffee so if you ever saw me adding anything to a mug you would know it is lousy coffee, (think Starbucks). :-)

Not a fan. There was strong odd odor even through the shipping bag. I will experiment with them as a blend bean. Otherwise they will be tossed or for something else besides coffee. First big disappointment. That said CBC is my go-to green bean resource.

Roasted to full city+ on my Bullet w/ Tfinish@207degC and have excellent full bodied and chocolatey nutty results! Rested 3-6 days, med-fine grind, 40g/L, drip maker. I'm surprised to enjoy this even more than the honey process version (...also outstanding!).

This is the best coffee I've ever had. We roasted it just a few seconds into second crack and let it rest for a day. It had very little astringency or acidify. It had a wonderful aroma with dark chocolate flavors. Such a joy to drink.
