This coffee is best right after roast. I have found the longer it rests the more it loses. Strong notes of strawberry and hint of cacao. I roast on a behmor 10- 15 snaps into first crack. Cool for about two minutes in machine and then cool manually. Makes for a chocolate strawberry latte.

You can have your cake and eat it too. Before roasting my second pound of this coffee I was reading the cup notes of City and Full City +. I am a lover of the Chocolate, Black Berry. Bourbon and Brown Sugar Notes of Full City + but the Fruity Notes of the City roast also was deliciously smooth Chocolate covered Strawberry. So why cant you have both??? So I roasted both and mixed them and added a new twist to grinding my coffee with a hint of FLeur de sel (I am a Chef and Salt in moderation raises the flavor profile of whatever you are cooking including coffee!!..try it and thank me later) The result Ladies and Gentlemen was simply amazing!!! SPecifics half pound at a time: I am using an SR800. Fan 9 Heat on 1 until the beans start to turn(about 4 Minutes) Fan 7 Heat 6 unitl 392-402 degrees for 5 minutes. Fan 6 Heat 7 to 420-425 degrees until First Crack of or City Roast(about the 10 minute mark. Continue to Second Crack for Full City + plus 30 seconds. Cool Fan 9 and Power 1 for 3 minutes. Force cool in Freezer in a shallow dish for 10 minutes. Place in a one way Airtight container(I got mine from Coffee Corral in their Roasting Kit which I love!!!!) Gas for 2 days minimum. Best Flavor came after gassing for 3 days. Happy Roasting!!!

Just roasted our first batch of this coffee. What a treat! Very balanced and smooth. This coffee is sweet with definite chocolate undertones and great aroma. Bean quality is excellent.

Caught on fire in the roaster as there is a lot of chaf...I've been roasting coffee regularly for a number of years and this has never happened.

When referring to Light or Dark it is (Light = 1 Cracks and Dark = 2 Crack) and we rated it from 1:10. The Light brew was with 8 Cups of Water and 49 Grams of Coffee and Flavor was Strawberry with a rate of 12 and Strength of Coffee Strong . The Dark brew was with 8 Cups of Water and 49 Grams of Coffee and Flavor was Strawberry with a rate of 12 and Strength of Coffee Strong .
P.S. Sorry about the one posted the day before had computer problem and so did not reflect my real results. This one does thank you for a great Cup of Coffee.

When referring to Dark or Light it is (Dark = 2 Cracks and Light = 1 Crack) and we rated it from 1:10. The Dark brew was with 88 and 49 and was Strawberry taste with a rate of 12 and Strong . The Light brew was with 88 and 50 and was sweet orange, slight nutty, vanilla with a rate of 12 and Strong .

18 Rabbit is beautiful. J ust the nose is amazing. Like an old Moka natural, sweet blueberry waffles with maple syrup and deep! Really complex and full of character. Big flavor, transparent and harmonius, nice balance, fine texture.
Rare stuff!

HONDURAS,ORGANIC 18 RABBIT NATURAL, I roasted to medium and wow lots of fruity / berry sweet flavor, non acidic light body in the cup. The next batch will go for a fully city roast to bring out more body and hopefully tame some of the sweet fruit forwardness.

I appreciate the reviews on this Honduran Organic 18 Rabbit Natural. So followed a recommendation and roasted 40 seconds into 1C land it came out great. I bagged the rest and went on to roast many other coffees from CBC. I kinda forgot about this Honduran natural that simply aged away for maybe a month or so in my valved bag. Holy smokes, I brewed some up again recently thinking it might be stale by now.
No way! It was fantastic!!!! This coffee improves with age when others get thrown away if not used up. Def need to order more. Such a great value due to this characteristic.

This is a life changing bean. What that change entails is up to you. Good or bad, at least you had a heck of a cup of coffee.
I bought a bunch for the holidays, roasted it, and handed it out to co workers. I made the mistake of not trying it before I handed it out. I tried the little bit I had left and was kicking myself that I gave it all away. I will not be making that mistake again.

I have ordered and roasted many coffees from CBC and this one is my favorite of all of them. Keep coming back to it over others I have tried. Deep Rich Flavor that satisfies beyond measure. I only drink one cup a day and I wish that this body would tolerate more. I could drink two or three cups of this, just taking it slow in the monring and enjoy the rich flavors.

This coffee surprised me. I’m a big Ethiopian coffee fan, with the fruity berry flavors. This coffee mimics that exactly. It does go extremely fast from first crack to second, but I drop it as soon as first starts to slow down. Delicious! Ordering more as I write this!!

First time with this batch type. Had previously tried the Honduran 18 Rabbit Black Honey. In my roasting this proved more flavorful to the previous, and I thought that one was great. I play with roasts, going from light medium to dark medium, trying to find the most flavor. This bean has a lot no matter the middle range roasts. An excellent SA bean.

Wonderful coffee. It's pure vanilla, butter and cream. It's not too bold, but it's all flavor. These Honduran coffees from Marcala are some of the best in the world. If the Hondurans were better at marketing, these would sell at a very high price, indeed.

Found Michael Weiss' review below spot-on. Roast goes very quickly from 1st to 2nd crack, and could get away from you very easily if not paying close attention. His review really helped me to focus, and my roast ended up at about Full City+, a tad darker than I had intended, but at least not burnt. Agree with his taste assessment as well. Fruity, but no particular fruit. Definitely sweet. All in all, pleasant tasting, but not spectacular.

We always roast lighter, just past first crack so can't speak to the darker roasts, but this was one of those we thought was kind of middle of the road, not bad but not spectacular either. Drinkable!

I absolutely LOVE this coffee! I roast it medium and brew with a Hario v60 and drink it black. Outstanding! This is in my top 5 and I highly recommend it!

I am an Ethiopian Yirgacheffe lover and mainly dry processed and mainly for espresso/cappuccino purposes. Rabbit Natural is different. More typical for Central American closer by taste to Brazil.
It is nice and chocolaty, sweater rather, than fruity. Crowd pleaser. Comparable to Italian type of espresso. Makes good crema. Ethiopians are more exotic than Rabbit, but do not demean Rabbit. It is good overall.
Roasting is tricky since small procrastination make your from medium to dark and oily very fast.
May be depends what roaster do you use temperature regimen?
I roasted 4 pounds so far. My observation that 1st crack comes very organized and all beans almost together and space between end of 1 st crack and begging of 2nd in my fist batch was barely noticeable.
Finally by 4th pound I noticed that 40 seconds into 1 crack is enough to get you to what you want as they say medium roast. If you want for French Press or Chemex then wait for the end of 1 st crack and it will be still good. Going into 2 nd crack I found to be not really great.

This been has strong characteristics with intense berry aroma. The intense berry fruit forward flavour will develop into chocolaty mouthfeel. Such a rich and rewarding feeling. I keep reordering this bean. Just cannot stop drinking it.

We got this as part of the organic sample pack, and we were so impressed we bought more. We roasted this until just at second crack and would classify it as right around a full city roast. It had a nice shine to it immediately after roasting, which was surprising as it usually takes a few days to release those oils. While roasting, we noticed some cocoa notes, but the fruity notes quickly became the more dominant smell (and the taste as well).
We used this in our Expobar Brewtus espresso machine and found it pulled very well (17 grams in, 34 grams out in about 25-30 seconds). We usually pull shots around 198 degrees, but lowered it to 192 and liked the results.
I enjoy this in a latte with either maple syrup or honey and my husband enjoys it as a straight shot.

One of the more interesting beans I've roasted. Heavy notes of dried fruits and dark chocolate. Translates decently into the cup. Roasted my sample pack around a lighter medium, but this seems like it would take to the darker side of medium quite well.
I expect the black honey or washed process version of this bean loses a lot of the sweetness, but would be a much cleaner bean to roast.

Absolutely delicious. I even roast this dark and it's fantastic. Makes an intense, smoky, fruity, strong flavored coffee. My customers love this one and so do I. 10/10

I just tried my first batch of this. I am extremely impressed. This is one if the, if not THE most fruit-forward coffees I’ve ever tasted. I roasted in a whirly-pop on an electric stove at a touch under 4. Roasted to about Medium. LOTS of chaff. Roasts a bit quicker than washed varieties, if I’m not mistaken? When ground, it has very distinct aroma of dried, chocolate-covered cherries. It does not taste much different. This is going in my regular rotation. I just hope I can get it again when it’s time to re-order. I was going to try the honey process, but it was sold out, so I tried the natural, and now I’m glad I did.

This is an absolutely fantastic bean! The way we roasted it, it is extremely smooth yet sweet with virtually no acidity. It's a very complex bean that gives of a very unique flavor.

This coffee is fantastic! I am a lover of natural process coffees, especially lighter roasted with heavy fruit notes. Roasted to just to second crack, let sit to degas overnight, it had the best strawberry/fruit notes and a really nice body and sweetness, low acidity for me too, but I enjoy bright coffees, so that part might be subjective. it's definitely worth a try if on the fence!

I posted a review on this coffee ☕️ June 17, 2019. Today, i would like to compare this natural process with the washed process. Both were ordered and roasted yesterday. Personally, I usually wait 24 hrs. After roasting before grinding and brewing, but honestly, I love ❤️ coffee ☕️ and waived my 24 hour rule. I roasted about 11 pm last night and ground and brewed (2) 4 cup pots about 10 am this morning to try and compare each. First off, the washed process had virtually no chaff where the natural process did. It was dark and starting with the washed process, it was roasted into the second crack and was a darker roast than I usually do (my preferred is a medium roast, a bit into second crack). But to be consistent, I noted the temp., roast time and end color and replicated this for the natural process. As to comparing these two processes of this Honduran coffee ☕️ note the difference in pricing. The natural process cost more, but in my opinion, it is warranted! I stand by my original review of 6/17/19 and it remains the most unique coffee ☕️ I have ever tried!! It is a fantastic change-up or in the mood coffee ☕️, but not something I would drink, week in and week out. Now, having said that, if only my likes were forced to just drink one single origin day in and day out, i would have no problem whatsoever, drinking Honduran 18 Rabbit 🐇 washed process! I am glad I do not have to choose and I’m glad that both of these are available!!! Thank you CBC!!!
