Black Honey processed 18 Rabbit! The name “Honey Process” actually comes from how sticky the beans get during processing. This type of processing coffee beans is halfway between a washed coffee and a natural process coffee: it’s fruity, but not in as exaggerated a way as some naturals. It often has a more rounded acidity than washed coffees, with intense sweetness and complex mouthfeel. Typically, the more mucilage left on the bean, the sweeter the taste. Subcategories have developed based on the amount of mucilage that is left as well as their drying times: yellow, red, golden, black, and white honey.

The 18 Rabbit farms are owned by Senora Flhor, her mother, and 11 other members of her immediate and extended family. One of the 18 Rabbit farms won the Honduras Cup of Excellence in 2014, and her coffee auctioned for over $35/ lb. All 13 farms are managed by a different family member and separated into micro-lots, and Café Kreyol cups each of these with the family in order to help them improve scores, and hand select the best ones to bring home. Flhor and her family are paid over 300% higher wages than Fair Trade, as a reward for their exceptional organic coffee production practices and high score of 87 points on the selected lot.

Cupping Notes: Sweet chocolate taste, strong undertones of sugar cane and a fruity finish.

I bought a sample bag in the Valentine sale, but did not get around to roasting it for a couple of months. It was very tasty and chocolaty, but it was all sold out by then. I waited patiently for the next batch, and it is even better than the first batch, although less chocolaty. It is extremely complex, good for a sipping coffee as well as drinking with meals. Very robust, roasted to a true medium brown. Stir that whisk briskly in order to get most beans with even color, and trust your eyes at gauging when to stop. I made sure I got several pounds this time, as I am sure it will be a best seller. Do not worry if a couple of beans escape. If they are brown enough, you can put them in with the done ones.

This one's my fave, my go-to. I have a mean sweet tooth, and roasting beans myself allows me to make them as light as I want (caramel-colored when roasted, graham cracker color when ground). Smells like cookies when you grind them, though since I prefer light-as-can-be roast, I only use about a teaspoon's worth to make half a pot so I'm not up all night. Slightly citrusy (which I normally don't like), but a bit of cream rounds it out.

Roasting this bean in my Behmor with a manual profile, I get a very fruity cup without the overwhelming jamminess or acidity of some of the funkier natural beans. It has a bit of a tendency to runaway towards second crack with a very faint first crack, but when I nail that fully developed end of first crack roast it is a central pillar to my home espresso blend. This is easily one of my favorite coffees of the last couple of years of roasting!

The sweet, milk chocolate and stone fruit notes were prominent in both pour over and espresso. I found that pour overs had a softer acidity, but espressos had more of a citrusy acidity that I thought added a nice little pop to the cup, but wasn't too overpowering and went great with milk based drinks too.

Really surprising, chocolatey flavors. I roasted to City +. As an espresso, it had strong citrus flavors that were not really pleasant, but as a cortado with some milk and a touch of sugar, the sweeter flavors emerged. So no espresso for me on this, but it's a great coffee.

The first thing we noticed about these beans was the large amount of chaff floating around our Behmor roaster as the beans roasted. Other than that, the beans smelled so delicious, and the coffee was delightful. We will definitely get this again, as it is now one of our favorites.

Did two Roasts, one I stopped when first crack started and the other i allowed to go a minute after first crack stopped. Both were good, but I definitely liked the darker roast the best as the flavors really developed. I also noticed that it's a oilier than most. A very good cup of coffee that is a very pleasant break from my regular goto's.

My taste buds are not refined enough to address subtle flavor profiles, but I will tell you this is one hell of a good coffee. In fact, I enjoy it so much that it may well become my goto brew, replacing Ethiopian Yirg. I highly recommend you try it, and I'll bet you won't be disappointed.

This one actually had berry notes that were irresistible. Thank you Coffee Bean Corral!

You know it's going to taste like heaven when you stand with your nose over the coffee grinder letting the smell of the freshly ground beans soak into your soul. I think this might be the one to drink black. It's incredibly sweet and fruity but still full-bodied at a full city roast. You could probably go much darker with this one and still retain the sweet flavor but there really is no need.

Roasted twice so far, once to a light-medium, and once to dark. I’ve tried this and the Natural version, and I prefer the natural, personally, for its extremely fruit-forward flavor and aroma. If you don’t prefer that, this one might be for you. I prefer this one as a dark roast, personally, but the natural 18 rabbit is perfect as a medium roast. The black honey process beans tend to look further along than they actually are. I’d advise going a little longer than usual.

Really yummy! I just started roasting coffee, which I do in my cast iron pan. This was my first batch of roasting, and I was not disappointed. So glad I found this website, delicious coffee has never been more affordable. :)

Absolutely loved this one. Smooth and rounded cup. Actually tastes like it smells in a medium roast. Have already ordered another 3lbs

After many attempts with a BarWell Roaster, using 160 °C . I finally achieved a light roast without burning the beans. I used multiple roast sessions as to not over roast. The roaster's temperature gauge I decided was inaccurate. I achieved nirvana with a wonderful sweet chocolate nutty aroma & smooth clean taste with zero bitterness from over roasting. Recommending slow & low roasting <= 160°C. One must be very attentive & check the roasting frequently, it will be worth the effort.

RECEIVED THESE BEANS WITH GREAT EXPECTATION...WHERE SOMEONE GETS SWEET IS BEYOND ME.I DID NOTICE THE BEANS HAVE A TENDENCY TO ROAST ALMOST BLACK IN COLOR EVEN THOUGH I WAS VERY CAREFUL TO CONTROLL THE TEMPERATURE AND KEEPING THEM MOVING. THE TASTE FOR ME IS VERY ROBUST,STRONG BUT NOT NOTICING ANY SWEETNESS EXCEPT FOR THE SUGAR I ADD & SOME WHIPPING CREAM. ITS A GREAT CUP OF COFFEE THE BEANS SEEM FRESH ALTHOUGH WITH FREIGHT THEY COST $10.00 PER LB. I WISH I HAD A PLACE TO START A SMALL COFFE SHOP YOUR GLOBAL VARIETY OF BEANS WOULD CRUSH STARBUCKS!

Very happy with these beans. They were fruity and ripe with a finishing sweetness and easy drinkability. Due to natural process, I had a little difficulty roasting them, but that's on me! Would buy again.

It's too bad I only ordered a 1/2 lb of these beans. They are pretty amazing. I've just roasted up my second (and last 😣) available batch, and I am hoping the order I'm placing tonight will get to me in time to share with my friends before Christmas. I love when a new coffee becomes a new favorite.
