During our visit to Finca Los Cedros, we saw firsthand the dedication that goes into producing this exceptional Pink Bourbon. The farm has a section devoted exclusively to this rare varietal, allowing the Builes family to give each tree the focused care it deserves. Every cherry is hand-picked at peak ripeness, and because of the steep mountainside terrain, the team uses an innovative funnel system to safely transport freshly harvested cherries to the mill.
After harvest, the coffee undergoes a carefully managed 72-hour fermentation—48 hours of oxidation followed by 24 hours in mucilage—creating the variety's vibrant sweetness, delicate florals, and complex fruit notes. What impressed me most was the passion of the Builes family, especially Juan David Builes, whose blend of modern agricultural knowledge and family tradition is helping preserve Colombia's coffee heritage while producing truly remarkable coffees.
One of the most memorable parts of the visit was seeing peacocks freely roaming the farm alongside the coffee trees. Their presence added to the peaceful atmosphere and reflected the family's deep appreciation for the land and the environment they carefully steward.
