Colombia Organic Sierra Nevada is produced by just 78 family growers, located within the isolated Sierra Nevada de Santa Marta coastal mountain range in Northern Colombia’s Magdalena Department. Their co-op, The CooAgroNevada, also known as The Cooperative of Sierra Nevada and Santa Marta Coffee Growers and Farmers, unites these coffee growing families from 19 different villages with the combined goals to improve social welfare, economic growth, quality of coffee and eco-tourism while preserving the region’s picturesque peaks, rivers and valleys. The Colombia Organic Sierra Nevada is also designated as EP or “European Prep” — in the cup it achieves a very nice balance between acidity and body while delivering an overall smooth and pleasant profile with a slightly nutty finish.

Cupping notes: Well balanced acidity and body. Smooth taste profile with a somewhat nutty finish. Fruity with light, bouncy body and acidity. Subtle chocolate undertones.

Newb home roaster here. Used this for our first try roasting; Behmor 1600+, very basic test roast settings per mfr's suggestion. It was surprisingly wonderful. Took it about 5 seconds into second crack then rapidly cooled it. Couldn't contain ourselves for 24 hours…so tried it after about six. We got slightly more earthy undertones than chocolatey--maybe more like cacao nibs. Stacked on top of that, a range of flavors including subtle (not dramatic/overbearing) orange blossom or maybe star jasmine, something in the figgy zone, and something we don't have a name for, but bright and fresh. It all added up to a rich layered coffee. We drank the whole pot…after tying ourselves to the mast to resist further Coffee Sirens at 2100 hours on a "school night." I've been wanting to home roast for 15 years--wish I'd started sooner, but glad I finally did.

This bean is quickly becoming one of my favorites! Roasted just to the first crack delivers a smooth cup with hints of chocolate reminds one of having a hot cocoa. Surprise find indeed.

Despite the rave reviews I see here, not at all like other South American/Central American coffees. Similar to East African coffees, with a more earthy, winey, flavor which I do not find appealing. Perhaps CBC calls this flavor "nutty" in the descriptions. Just beware of this. I always equate this flavor with coffee that has gone stale or has oxidized. Everyone has their like and dislikes. Maybe this batch is atypical?

Solid cup of coffee. Roasted to medium roast with Whirly-Pop popcorn maker. Exactly what I was expecting from a Colombian coffee. Might mess with the roasting time to see what else this coffee can do. ANY advice for this beginner roaster is more than welcome!!!. I have tried 6 different coffees so far. I am finding that maybe i am not in love with beans from Africa (could be roasting wrong though. My #1 so far (we are all different) is the Haiti and then Brazil bourbon

Have ordered this 3 times now and it always delivers a good cup. I take it just into second crack ( 10 seconds or so ), let it setup a day or two, and then enjoy. I have a pound in the drawer I'm going to cook up, back up in quarters and send to special friends for Xmas. Oh, before I forget - the Corral is fantastic love the service!

I have tried about a dozen different varieties of beans so far. This one is my favorite. Very distinctive flavor profile. It is very complex, with a lot of different flavors going on in the cup. Somewhat fruity I would describe it. It has a strong and pleasant aftertaste. Keep it lighter than dark roast, it loses complexity at darker roasts. City plus to full city for me. Any time I think of this this bean I want to drink some. Absolutely delicious!

Whenever and wherever possible, I try to stick with organic coffees or those that are labeled RFI (Rain Forest Initiative), and FTO (Free Trade Organization). I just believe these are better tasting and better for you from a healthy perspective and better for the workers and sellers to the buyers. Colombian coffees have long been a favorite coffee among many people and especially as a breakfast coffee. I roasted a pound of this yesterday 7/6/20 (on our anniversary), and the aroma was wonderful. I'm impatient and even though one should wait anywhere from 24-48 hrs. to grind and brew, and this does make a difference. I just cannot wait that long. :) Ground and brewed a pot yesterday afternoon and another this morning. Honestly, I could not tell the difference. This is a GREAT morning coffee! Smooth and delicious and what one expects from Colombian coffee. Have not had this in a bit. Glad I ordered it! It is many people's favorite coffee of all and perhaps the most recognised? It is a good thing to have a variety of coffees and when you return to your favorite, your taste buds wake up and scream with delight, THANK YOU!!! :)

Colombia Organic Sierra Nevada FTO has become a mainstay of our regular orders. It is rich and very smooth. We are not fans of the sweeter coffees. We like them dark and bold. Each of our orders, we get 5 lb of these beans, and try out some others. We have tried a number of different levels of roast with this one, and have found these beans to be fairly forgiving. We roast in a cast iron wok that came with my grill over a propane burner I use for brewing beer. Which reminds me, I have used these beans in a porter that came out excellent, too!

Bold and smooth. Roasted till about 1/2 way of 2nd crack. I usually only drink 1 cup of coffee per day but know I'm doing two.

We've been roasting our own coffee for almost 5 years. We eat mostly organic food and grow much of what we eat so we thought " why don't we gat organic coffee?" Our search lead us to Coffee Bean Coral and this is our second order. We roast to Full City as we enjoy strong flavor and this product fits right in . We"ll be back in a few months to get some more.

A solid Colombian bean for everyday drinking. Taken to a full city+ or Vienna roast made for pleasant drinking black, with balanced acidity and a mild chocolate aroma. I'd recommend this as an excellent modestly priced bean to bulk up on for home roasting.

I am just beginning to learn how to roast coffee. I'm using a Poplite Hot Air Popcorn Popper. I chose this variety because I have always enjoyed Columbian coffee and it's organic. So far the flavor has been consistent. I count on that as I experiment with time and temperature and how they affect the flavor. I haven't roasted a batch that I didn't like.

This is a good tasting coffee. Every cup I say, "what a great cup of coffee". I tried many types of coffee, but this to me is the BEST. The finest tasting coffee I ever had. I have been buying this coffee for some time. We ran out and since we had purchased other coffee we used those. UGH UGH. I stopped drinking coffee until I ordered this again. What a great tasting coffee. And my wife agrees.

Only the 4th bean that I have roasted but it certainly has a smooth taste to it and is one of the better ones I have tried. I haven't roasted enough to say whether it will become a staple but I will definitely buy it again once I have tried some other varieties.

I've tried many beans in my life, this is one of my favorites! A low chaff clean tasting organic Columbian. The beans look so good and I'm happy they're grown here in such place as Oregon.

I just cooked my first batch today. I’m experimenting with cooking time and color. Dark roasted coffee coffees are bitter and un-drinkable to me. Unless they are made in a espresso maker. I’d rather have it lightly roasted. I’m not a fan of dark roasted coffee like all the younger people rave about. (Apple heads in Cupertino’s mother campus) My next batch will a medium roast. If I opened a roasting/coffee cafe near a Phil’s I could make a load of money with these type of beans. PS. I agree with one reviewer, let them set for a day.
