I roasted this to a med- dark roast, very good, slightly acidic, but well rounded. Will more than likely buy again.

I really liked this one. Was my second favorite out of a dozen or so organic types I have tried from here... favorite was Haitian Blue. I like the brightness but it also has a lot of complexity. Using for espresso with a flair press, roasting to just under second crack.

As a single, it is quite pleasant and although it is not “sugar sweet” the sweetness is there, the coffee is what I call bright (citric on the pallet but not citric in flavor). Think dutch cocoa mixed with artificial sweetener. The bitterness of raw cocoa is there but toned with artificial sweetener that has that distinct edge like “the pink stuff”. Added to milk the flavors become more pronounced taking on a “sugar free cocoa” flavor. Roasted to 260 degrees C (14 min) over gas flame using a Kaldi Mini.
