The Kayumas Estate, or "Golden Wood", is located on the island of Java in Indonesia and was first established by the Dutch in the 18th century. This Estate is situated in the northeast area of the Bondowoso province of Java. Initially, coffee was cultivated in low lying areas but, in the 19th Century, coffee leaf rust disease destroyed most of their production, forcing new coffee cultivation into the highland plateaus where higher altitudes and volcanic soil provided perfect growing conditions. The Kayumas coffee is grown in East Java, on a government-run estate where the coffee is handpicked and then processed using the fully washed method – this gives the coffee a cleaner profile than other Indonesian coffees.
Cupping Notes: Rich, low acidity, medium bodied coffee with notes of dark chocolate, cinnamon and hints of nougat.

Excellent coffee. Easy to roast to medium level in my Gene' Cafe. Starting at room temperature, without pre heat. 14.5 to 15 minutes at 455 deg F. Just past 1st crack. Let machine go through its own cool down cycle C.O.L. with lid down. Nice palate of nutty cream after initial sip.

I am not a pro at roasting and currently find that I love my air popcorn popper to roast the best, since I do a pot at a time. With that said, I found that when I roasted this one dark it lost a lot of its special character (chocolate overtones) that I liked so much at a medium dark (the best) or medium roast. When roasted medium dark it had a full rich coffee taste with nearly no acidy notes.

This was a bit disappointing to me. Not a lot of character - Roasted to full city and Vienna. However, this is the first Java I've ever roasted, so another origin may prove differently. We do use it in one of our blends. It has a very mellow character, low acidity, and good basic coffee taste.

Roasted well into second crack on this one, was hoping for a dark roast blend with Yemeni Moka Sana so can’t comment on stand alone as it wasn’t tasted before combining with the Moka. Friends who had the combo said they liked it but they were friends- I over roasted the Yemen and my Behmor spent some time in a safe mode to punish me. I’ll have to re-order and try again. The Moka Java was good but I’m sure it could have been better.

Roasted to nearly smoke alarm ( Vienna) in the Behmor 2000AB, and I got a cup much like you would get at one particular major coffee chain. I usually don’t roast dark, but for those who add cream and sugar, which my wife does, darker and “near burnt” roasts can give a better-tasting cup. So she gives this one 5 stars, and I recommend it as a Vienna- French roast!

I'm pretty new to roasting, and found this variety was one of the easiest to work with, yielding one of my most successful roasts to date. I tried two different roast levels, American roast (mid first crack), and a Vienna roast. I like a blend of medium roast with a little boost dark roast when I brew my coffee. This yielded a very rich and smooth cup, with good earthy notes, a hint of chocolate, and mild acidity. This was nearly a perfect cup of coffee. I want to try blending in a touch of some other beans for an extra whiff of complexity.

I purchased one of the samplers and the best of the five types I roasted was Java. It roasts beautifully and can be mixed with Columbia roasts quite nicely. Even in a whirly popper the roast comes out even and beautiful.
