Shb coffees from Guatemala to me roasted till half way through 2nd crack, gives a smooth nutty flavored drink, could be a bit fuller flavor but it'll make you smile

I roasted it to medium-dark, just past second crack. I shook out the chaff and immediately brewed it in my six-cup Bialetti moka pot. Added a dab of honey and some half-n-half. The result was a cup of stupendously good, rich, smooth, delightful arabica. Not too bold, no bitter aftertaste - it was just right. It was as good as the purple Kona that I got a hold of last month, but at a fraction of the price. This is now my current favorite coffee. Don't miss out on this fine coffee.

When referring to Dark or Light it is (Dark = 2 Cracks and Light = 1 Crack) and we rated it from 1:10. The Dark brew was with 8 Cups of Water and 44 Grams of Coffee and Flavor was Dark Chocolate sweet taste with a rate of 7.5 and Strength of Coffee Strong. The Light brew was with 8 Cups of Water and 48 Grams of Coffee and Flavor was Chocolate & Honey Sweet with a rate of 7 and Strength of Coffee Strong.

I will have this coffee with me at all times. A good blend of sweet, fruity and chocolate with a creaminess that is so pleasing. Good body and aroma make it perfect any time of day. Awesome flavor at med+.

I would say the aroma and tasting notes I got are dark fruits and cocoa. Really, really good in my opinion. I've been home roasting for just three months or so. I use a Whirley Pop on the side burner of our grill. I brought a one-pound batch up to 400 degrees with high flame and then lowered it right as first crack started and kept it there for 90 seconds as a very slow first crack continued. Then I pulled it and let it rest for 2 days. My wife isn't as much a fan of dark fruit and floral notes in coffee so she rated this slightly lower.

Roasted to 395•. Was clear and bright with no bitterness good aroma and body. Will buy more

I love huehuetenango coffees. They have a lot going on. Sweet caramel and some lighter chocolate flavors. Dark red ripe fruit flavors. I don't like to over roast them, I end with no more than a FC roast. A great drinker, smooth of body.
